A quick and healthy recipe for zucchini noodles, or ‘zoodles’, that are light yet satisfying, perfect for busy weeknights.

Ingredients

Scale
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • Optional: garlic, parmesan cheese, cherry tomatoes, basil

Instructions

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodles.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the zucchini noodles to the hot pan and sauté for 2-3 minutes until slightly softened.
  4. Season the zoodles with salt and pepper to taste.
  5. Add minced garlic to the mix for a flavorful kick (optional) and sauté for an additional minute.
  6. Serve topped with parmesan cheese, halved cherry tomatoes, and garnish with fresh basil.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. To avoid soggy noodles, enjoy fresh.
