A light and healthy twist on classic carbonara, featuring spiralized zucchini noodles and crispy bacon in a creamy sauce.

Ingredients

  • 2 large zucchinis, spiralized
  • 4 slices of bacon, chopped
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Crisp the bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. Sauté the minced garlic in the same skillet for about 1 minute.
  3. Cook the spiralized zucchini noodles in the skillet for about 3-4 minutes until just tender.
  4. Whisk the eggs and Parmesan cheese together in a bowl.
  5. Create the sauce by removing the skillet from heat and stirring in the egg mixture quickly.
  6. Combine the reserved bacon and season with salt and pepper.
  7. Serve immediately, garnished with fresh parsley.

Notes

Choose firm zucchinis for the best noodle shape. Don’t overcook the zucchini noodles; they should be tender yet slightly al dente.
