These zucchini fritters are crispy on the outside and tender on the inside, featuring fresh zucchini, garlic, and Parmesan cheese.

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Grate the zucchinis into a bowl. Sprinkle with salt and let sit for 10 minutes.
  2. Squeeze out excess moisture from the zucchini using a kitchen towel.
  3. Combine the squeezed zucchini, flour, Parmesan cheese, beaten egg, green onions, garlic, and black pepper in a mixing bowl.
  4. Heat oil in a frying pan over medium heat.
  5. Fry spoonfuls of the zucchini mixture until golden brown, about 3-4 minutes per side.
  6. Drain on paper towels and serve warm.

Notes

For added flavor, try incorporating fresh herbs or spices. These fritters can also be baked for a healthier option.
