Ingredients
Scale
2 medium zucchini, grated
1 teaspoon salt
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 egg, beaten
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Oil for frying
Instructions
Grate and salt the zucchini: Grate the zucchini and place it in a bowl. Sprinkle with salt and let it sit for 10 minutes.
Squeeze out liquid: After the zucchini has rested, grab a clean kitchen towel and squeeze out the excess water.
Combine ingredients: In the bowl with the zucchini, add the flour, Parmesan cheese, beaten egg, black pepper, and garlic powder. Mix well until everything is evenly incorporated.
Heat the oil: In a skillet over medium heat, add a generous amount of oil.
Fry the fritters: Drop spoonfuls of the zucchini mixture into the hot oil and flatten them slightly. Fry until golden brown on both sides, about 3-4 minutes per side.
Drain and serve: Remove the fritters from the skillet and place them on paper towels to drain. Serve warm with sour cream or fresh herbs.
Notes
