A moist and flavorful zucchini bread that combines warm spices with the subtle sweetness of zucchini.

Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup chopped nuts (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini, sugar, vegetable oil, vanilla extract, and eggs in a large bowl. Mix well.
  3. Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  4. Mix the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fold in the chopped nuts and raisins or chocolate chips if desired.
  6. Transfer the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For best results, use freshly grated zucchini. Store leftovers in an airtight container for up to 3 days at room temperature or freeze for up to 2-3 months.
