A delightful dish that combines fresh zucchini with a flavorful stuffing for a healthy summer meal.

Ingredients

  • 2 medium zucchinis
  • 1 cup diced tomatoes
  • 1/2 cup cooked quinoa or rice
  • 1/2 cup shredded cheese (mozzarella or cheddar)
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create a boat shape.
  3. Heat a little olive oil in a skillet over medium heat. Add the chopped onions and minced garlic, sautéing until translucent.
  4. Add the diced tomatoes, cooked quinoa or rice, Italian seasoning, salt, and pepper to the skillet. Mix well and cook for a few minutes.
  5. Spoon the mixture generously into the boat-shaped zucchinis.
  6. Sprinkle the shredded cheese generously over the stuffed zucchini halves.
  7. Bake for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbling.
  8. Remove from the oven, let cool slightly, then serve warm.
