A delightful twist on the classic walking taco, this casserole combines crunchy tortilla chips with seasoned beef, black beans, corn, and cheese for a savory, satisfying meal.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 3 cups crushed tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream and diced tomatoes for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the beef in a skillet over medium heat until fully cooked. Drain excess fat.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet, stirring until heated through.
  4. Layer half of the crushed tortilla chips, half of the meat mixture, and half of the cheese in a baking dish.
  5. Repeat the layers with the remaining ingredients.
  6. Bake in the preheated oven for about 20 minutes, until the cheese is bubbly.
  7. Serve hot, topped with sour cream and diced tomatoes.
