A delightful Tuscan Butter Salmon dish, simple and tasty, perfect for making dinner feel special.

Ingredients

  • 4 Salmon fillets
  • 4 tbsp Butter
  • 3 cloves Garlic, minced
  • 1 cup Cherry tomatoes
  • 2 cups Spinach
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp Lemon juice

Instructions

  1. Melt the butter in a skillet over medium heat until creamy and frothy.
  2. Sauté the minced garlic until fragrant, about 30 seconds.
  3. Cook the cherry tomatoes until they begin to burst, approximately 3-4 minutes.
  4. Add the spinach and sprinkle with Italian seasoning; cook until wilted.
  5. Season the salmon fillets with salt and pepper generously.
  6. Cook the salmon in the skillet, 4-5 minutes on one side, then flip and cook until fully cooked through.
  7. Drizzle over lemon juice and sprinkle with grated parmesan before serving.

Notes

For the best sear on the salmon, ensure the skillet is hot enough before adding the fillets. Leftovers can be stored in an airtight container for up to 3 days.
