A delightful Tuscan dish featuring salmon fillets seared in a buttery garlic sauce with spinach and cherry tomatoes.

Ingredients

  • 2 tablespoons Butter
  • 2 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups Spinach
  • 1 cup Cherry tomatoes, halved
  • 1/4 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Melt the butter in a skillet over medium heat until shimmering and fragrant.
  2. Add minced garlic and Italian seasoning to the melted butter, cooking until fragrant—about 1 minute.
  3. Sear the salmon fillets, seasoned with salt and pepper, in the skillet for 4-5 minutes on each side.
  4. Introduce the spinach and cherry tomatoes to the skillet, cooking until the spinach wilts and the tomatoes soften—about 2 minutes.
  5. Finish by sprinkling freshly grated Parmesan cheese before serving.
