Delightful zucchini boats filled with ground turkey, tomatoes, and melted mozzarella, perfect for a comforting yet healthy meal.

Ingredients

  • 2 medium zucchinis
  • 1 pound ground turkey
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Olive oil
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out some of the flesh.
  3. Heat a splash of olive oil in a skillet over medium heat.
  4. Add the ground turkey and cook until browned, about 5 to 7 minutes.
  5. Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
  6. Carefully fill each zucchini half with the turkey mixture and top with mozzarella cheese.
  7. Place the zucchini boats on a baking sheet and bake for 25-30 minutes.
  8. Garnish with fresh parsley before serving.

Notes

Try adding jalapeños for heat or using a mix of black beans and quinoa for a vegetarian option.
