  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • Salt and pepper to taste

  • Chopped cilantro (for garnish)

Instructions

  1. Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  2. Brown the Turkey: Add the ground turkey to the skillet, using a spatula to break it apart. Cook until browned, stirring frequently, about 5-7 minutes.
  3. Add Color and Flavor: Stir in the bell pepper, black beans, corn, taco seasoning, and diced tomatoes. Mix everything well to ensure the flavors meld beautifully.
  4. Simmer for Flavor: Reduce the heat and allow the mixture to simmer for 10-15 minutes. This will give time for the ingredients to marry, creating a rich, delicious sauce.
