A vibrant celebration of flavors and textures featuring ground turkey, seasoned perfectly and served over rice or quinoa.

Ingredients

Scale
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked rice or quinoa
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • Sour cream and salsa for topping

Instructions

  1. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and aromatic—this should take about 3 to 5 minutes.
  2. Brown the turkey: Add the ground turkey to the skillet, breaking it apart as it cooks. Stir frequently, ensuring it browns evenly. This should take around 5 to 7 minutes until the turkey is fully cooked.
  3. Season and combine: Stir in the taco seasoning, corn, and black beans. Let this mixture cook for an additional 5 minutes, allowing the flavors to meld beautifully together.
  4. Assemble your bowl: In a large bowl, layer the cooked rice or quinoa first, followed by the turkey mixture. Top it off with diced tomatoes, avocado, and a generous helping of shredded lettuce.
  5. Top and serve: Finally, add a dollop of sour cream and drizzle salsa on top before digging in. Serve immediately, and enjoy the burst of flavors in every bite!

Notes

Feel free to swap the ground turkey for ground chicken, beef, or a plant-based protein for a vegetarian option.
