Delicious turkey stuffed zucchini boats filled with a savory mixture of ground turkey, rice, and melty mozzarella cheese.

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Sauté the diced onions and minced garlic in a skillet until fragrant.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Mix in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff the zucchini halves generously with the turkey mixture.
  7. Place the stuffed zucchinis in a baking dish and top with mozzarella cheese.
  8. Bake for 25-30 minutes until tender and the cheese is bubbly and golden.

Notes

For added flavor, consider adding Worcestershire sauce or hot sauce. You can also boost nutrition with spinach or bell peppers.
