Savory turkey stuffed peppers filled with rice and spices, perfect for a comforting meal.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to prepare for baking those perfect stuffed peppers.
  2. Cut the tops off the bell peppers and gently remove the seeds. Keep the tops; they can be diced and added to the filling for extra flavor!
  3. In a skillet, cook the chopped onion and minced garlic over medium heat until they become translucent and fragrant.
  4. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spatula.
  5. Combine the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper into the skillet with the turkey mixture.
  6. Carefully stuff each of the prepared bell peppers with the turkey and rice mixture.
  7. Place the stuffed peppers upright in a baking dish and cover with foil. Bake for 30 minutes.
  8. Remove the foil and sprinkle shredded cheese on top, then return to the oven for 10 minutes.
  9. Once done, take them out and let them cool slightly. Serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. They also freeze nicely.
