A vibrant Thai Beef Salad combining tender beef with fresh vegetables, dressed in a tangy lime sauce.

  • 1 lb beef sirloin, thinly sliced
  • 4 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1 red bell pepper, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon chili flakes
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat and add the thinly sliced beef sirloin. Cook until browned, about 3-4 minutes, making sure to keep an eye on it so it doesn’t overcook. Once done, let it cool slightly.
  2. Toss together the mixed salad greens, cucumber, red bell pepper, red onion, cilantro, and mint in a large bowl.
  3. Whisk together the lime juice, fish sauce, sugar, chili flakes, and season with salt and pepper in a small bowl.
  4. Once the beef has cooled slightly, toss the salad with the dressing and top with the sliced beef before serving.

Notes

For added crunch, consider tossing in some roasted peanuts or cashews. Use gluten-free fish sauce for a gluten-free variation.
