Ingredients

Scale
  • 2 chicken breasts, diced
  • 1 cup teriyaki sauce
  • 1 cup cooked rice (white, brown, or jasmine)
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. In a pan, heat a little oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 6-7 minutes.
  2. Pour in the teriyaki sauce and stir to coat the chicken fully. Let it simmer for 3-5 minutes.
  3. In a serving bowl, place your cooked rice as the base, creating a cozy nest for the yumminess ahead.
  4. Top the rice with the teriyaki chicken and scatter your mixed vegetables over the top.
  5. Garnish with sliced green onions and sprinkle with sesame seeds for extra crunch. Serve hot and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave until warmed through. Store veggies separately if possible to keep them crisp.
