Comforting taco stuffed sweet potatoes filled with savory meat, beans, corn, and topped with fresh ingredients.

  • 4 medium sweet potatoes
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup cheddar cheese, grated
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork. Place them in the oven and bake for 45-60 minutes until tender.
  3. Heat a skillet over medium heat and add the ground beef or turkey, cooking until browned and crumbly. Drain excess fat.
  4. Sprinkle in the taco seasoning, black beans, and corn. Stir and heat until warmed through.
  5. Slice the baked sweet potatoes open lengthwise and fluff the insides with a fork.
  6. Stuff each sweet potato with the taco mixture, packing it high.
  7. Sprinkle cheddar cheese on top, add sour cream, green onions, lettuce, and diced tomatoes.
  8. Serve immediately while warm.

Notes

Make sure to pierce the sweet potatoes before baking to prevent bursting. You can customize the protein and toppings to suit your taste.
