A quick and hearty taco-inspired pasta dish that is perfect for busy weeknights.

Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream and green onions for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Brown the meat in a large skillet over medium heat until browned. Drain excess fat.
  3. Stir in the taco seasoning, salsa, black beans, and corn. Cook for another 5 minutes, stirring occasionally.
  4. Add the cooked pasta to the skillet and mix until well combined.
  5. Sprinkle the shredded cheese on top and cover the skillet for a few minutes until the cheese is melted.
  6. Serve hot, garnished with sour cream and green onions.

Notes

For a vegetarian option, swap the meat for lentils or additional black beans.
