A comforting bowl of pasta infused with the bold flavors of tacos, featuring creamy cheddar cheese and customizable toppings.

Ingredients

  • 8 oz pasta (any shape)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup corn (frozen or canned)
  • 1 cup beef or chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. Sauté the ground beef or turkey in a large skillet over medium heat until browned, then drain excess fat.
  3. Stir in the taco seasoning, diced tomatoes, corn, and broth. Allow to simmer.
  4. Add the cooked pasta to the skillet and stir to coat.
  5. Melt the shredded cheddar cheese into the dish, creating a creamy consistency.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro and serve hot.

Notes

For extra flavor, add a squeeze of lime or a splash of hot sauce before serving. This dish is also great for meal prep.
