A refreshing and colorful salad perfect for summer gatherings, loaded with fresh ingredients and a zesty dressing.

Ingredients

  • 8 ounces of pasta (such as rotini or penne)
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1/2 cup of red onion, diced
  • 1/2 cup of bell pepper, diced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions until it’s al dente. Drain it well and let it cool.
  2. Combine the cooled pasta with halved cherry tomatoes, crunchy cucumbers, diced red onion, vibrant bell pepper, fresh parsley, and creamy feta cheese in a large mixing bowl.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl until well blended.
  4. Dress the salad by pouring the dressing over the pasta mixture and tossing gently to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

This salad can be made a day in advance. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
