These stuffed bell peppers are a comforting and versatile dish, filled with juicy meat, rice, and aromatic spices, baked to perfection.

Ingredients

  • 4 bell peppers
  • 1 lb ground beef (or turkey)
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the onion and garlic over medium heat until softened.
  4. Add the ground beef (or turkey) and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Fill the bell peppers with the meat mixture, packing gently.
  7. Top the stuffed peppers with shredded cheese, if desired.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until tender and golden.

Notes
