A delightful twist on a classic dessert featuring fluffy biscuits topped with sweetened strawberries and whipped cream.

  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 2 cups fresh strawberries, sliced
  • 2 tablespoons sugar (for strawberries)
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Whisk together the flour, baking powder, sugar, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Pour in the heavy cream and mix until just combined.
  5. Turn the dough onto a floured surface and knead gently a few times.
  6. Roll out to about 1-inch thickness and cut into rounds.
  7. Place the biscuits on a baking sheet and bake for 15-20 minutes or until golden brown.
  8. Combine sliced strawberries with sugar and let them macerate for about 10 minutes.
  9. Split the biscuits in half, layer with strawberries and whipped cream, and top with the other half.

Notes

Serve with iced tea or lemon curd for a refreshing twist. Store leftover biscuits in an airtight container at room temperature for up to 2 days.
