A refreshing and creamy Strawberry Icebox Cake perfect for summer gatherings.

Ingredients

  • 2 pounds fresh strawberries, sliced
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (14 ounces) of graham crackers
  • 1 cup whole milk

Instructions

  1. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Create a layer of whipped cream in a rectangular or square dish.
  3. Layer graham crackers over the cream.
  4. Add a layer of sliced strawberries over the graham crackers.
  5. Build the layers until all ingredients are used, finishing with whipped cream on top.
  6. Chill and refrigerate for at least 4 hours or preferably overnight.
  7. Serve chilled, garnished with additional strawberries if desired.

Notes

Store leftovers in the refrigerator for up to 3 days. Fresh strawberries in season provide the best flavor.
