A delightful Spinach and Feta Quiche, perfect for brunch or a quick weeknight dinner, featuring a balance of creamy feta and fresh spinach in a flaky pie crust.

  • 1 pie crust
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chopped onions in olive oil over medium heat until translucent, about 3-4 minutes.
  3. Add the fresh spinach and sauté until wilted, about 2-3 minutes.
  4. Whisk together the eggs, milk, salt, pepper, and nutmeg until well blended.
  5. Place the pie crust in a dish and spread the sautéed spinach and onions evenly over it.
  6. Sprinkle crumbled feta cheese over the veggies.
  7. Pour the egg mixture over the filling.
  8. Bake in the preheated oven for 30-35 minutes or until set and lightly golden.
  9. Cool for a few minutes before slicing.

Notes

Serve warm or at room temperature, paired with a light salad. Store leftovers in an airtight container in the fridge for up to 3 days.
