A low-carb, healthy alternative to traditional pasta, spaghetti squash is versatile and delicious.

Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese (optional)
  • Herbs (optional, e.g., parsley or basil)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the cut sides with olive oil and season with salt and pepper.
  4. Place the halves cut-side down on a parchment-lined baking sheet.
  5. Roast for about 40-50 minutes, or until the flesh is tender.
  6. Remove from the oven and let cool slightly.
  7. Scrape the flesh into strands with a fork.
  8. Serve with your choice of sauce and garnish with Parmesan cheese and herbs if desired.

Notes

For a quick meal, pair with marinara or garlic and olive oil. Cooked spaghetti squash can be stored in the refrigerator for up to 4 days.
