A simple and satisfying dish, Slow Cooker Carnitas features tender pork shoulder simmered with spices and citrus, perfect for tacos or burritos.

Ingredients

  • 2 pounds pork shoulder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lime, juiced
  • 1 orange, juiced

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the pork shoulder on all sides until golden brown.
  2. Transfer the pork to the slow cooker.
  3. Sprinkle in chopped onion, minced garlic, cumin, oregano, chili powder, salt, and pepper. Pour lime and orange juice over the top.
  4. Cover and cook on low for 8 hours until the pork is fall-apart tender.
  5. Remove the pork and shred it into strands using two forks.
  6. Place the shredded meat under the broiler for 5-10 minutes for optional crisping.
  7. Serve the carnitas in tacos or burritos with your favorite toppings.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 2 months.
