A vibrant and refreshing shrimp ceviche marinated in zesty lime juice with fresh vegetables.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1 small red onion, finely chopped
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1/2 cup chopped cilantro
  • 12 jalapeños, minced
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp in a large bowl with lime juice. Cover and refrigerate for about 120 minutes, or until opaque and cooked through.
  2. Combine the red onion, tomatoes, cucumber, cilantro, and jalapeños with the marinated shrimp.
  3. Season with salt and pepper, adjusting to your preference.
  4. Mix well to combine all ingredients and serve chilled with tortilla chips or on its own.
