A vibrant, easy-to-make dish that combines shrimp, bell peppers, and spices baked on a single sheet pan for quick prep and cleanup.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the shrimp, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper in a large bowl.
  3. Spread the mixture evenly on a sheet pan.
  4. Bake for 10-12 minutes or until the shrimp are cooked through and the vegetables are tender.
  5. Serve in warm tortillas with fresh lime wedges.

Notes

For added texture, consider adding zucchini or corn. If you want a spicy kick, add sliced jalapeños.
