A simple and delicious recipe for chicken fajitas roasted on a single sheet pan, bursting with vibrant flavors.

Ingredients

  • 1 lb chicken breast, sliced
  • 1 bell pepper, sliced (choose your favorite color!)
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas, for serving
  • Optional toppings: salsa, avocado, cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper in a large bowl and toss to coat.
  3. Spread the mixture evenly onto a sheet pan in a single layer.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
