A simple and flavorful Sheet Pan Chicken Souvlaki that brings Greek flavors to your dinner table.

Ingredients

  • 1.5 lbs chicken breast, cut into cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 red onion, cut into wedges
  • 1 bell pepper, cut into pieces
  • Cherry tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C), setting the stage for an aromatic feast!
  2. Combine the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper in a bowl to create the marinade.
  3. Add the chicken cubes to the bowl and toss them in the marinade. Let it marinate for at least 30 minutes.
  4. Place the marinated chicken, red onion wedges, bell pepper pieces, and cherry tomatoes onto a sheet pan.
  5. Bake in your preheated oven for 20-25 minutes, or until the chicken is fully cooked and the vegetables are tender.
  6. Serve warm, either in pita bread or over rice.

Notes

For crispy chicken, broil for the last 2-3 minutes of cooking. Feel free to swap out veggies based on preference.
