  • 2 cups vegetable broth or water
  • 2 cups assorted vegetables (e.g., bell peppers, zucchini, carrots, onions)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse 1 cup of quinoa under cold water and drain.
  3. Bring 2 cups of vegetable broth or water to a boil.
  4. Prep your assorted vegetables into bite-sized pieces.
  5. Roast the vegetables on a baking sheet for about 20-25 minutes.
