Deliciously roasted sweet potatoes that are crispy on the outside and tender inside, perfect as a side dish or snack.

  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Optional: Fresh herbs (like rosemary or thyme)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the cubed sweet potatoes with olive oil, salt, pepper, and optional herbs.
  4. Spread the seasoned sweet potatoes on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, flipping halfway, until golden brown and tender.
  6. Serve warm and enjoy!

Notes

For an extra crispy texture, soak the cubed sweet potatoes in cold water for 30 minutes before seasoning.
