A nostalgic and delightful Peach Upside Down Cake featuring caramelized peaches atop a soft cake, perfect for family gatherings and summer picnics.

  • 3 cups sliced peaches (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a small saucepan, melt the butter over medium heat and stir in the brown sugar until dissolved. Pour into the prepared pan.
  3. Arrange the sliced peaches on top of the brown sugar mixture.
  4. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  5. Whisk together the eggs, milk, and vanilla extract in another bowl.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined.
  7. Carefully pour the batter over the arranged peaches in the pan and bake for 35-40 minutes.
  8. Allow to cool briefly before inverting the cake onto a plate and serving.
