A delightful twist on the classic baked oatmeal, combining juicy peaches with hearty oats and warm cinnamon for a comforting breakfast.

  • 2 cups milk (or almond milk)
  • 2 ripe peaches, chopped
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup or honey
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. Mix together the rolled oats, baking powder, cinnamon, and salt.
  3. Whisk together the milk, brown sugar, maple syrup (or honey), eggs, and vanilla extract.
  4. Combine the wet ingredients into the oat mixture until nicely combined.
  5. Fold in the chopped peaches gently.
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 35-40 minutes, until golden brown.
  8. Cool slightly before serving.

Notes
