  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • 1 lemon (for juice and zest)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Pat the scallops dry with paper towels, and season with salt and pepper to enhance their natural flavor.
  2. Heat olive oil in a large skillet over medium-high heat. You want it hot enough to give the scallops a nice sear.
  3. Add the scallops to the skillet, ensuring they aren’t overcrowded.
  4. Sear the scallops for about 2-3 minutes on one side until they develop a golden-brown crust.
  5. Carefully flip the scallops and add butter to the skillet.
  6. Cook for another 2-3 minutes while basting the scallops with the melted butter.
  7. Squeeze fresh lemon juice over the scallops and sprinkle the zest on top.
  8. Remove from heat and serve warm, garnished with fresh herbs if desired.

Notes
