A comforting one pot meal that’s packed with protein and veggies, perfect for busy weeknights or laid-back gatherings.

Ingredients

  • Pasta (e.g., penne or elbow macaroni)
  • Ground beef or turkey
  • Taco seasoning
  • Diced tomatoes
  • Black beans
  • Corn
  • Onion
  • Garlic
  • Cheddar cheese
  • Chicken or vegetable broth
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering but not smoking.
  2. Add chopped onion and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
  3. Add ground beef or turkey and cook until browned, breaking it apart as it cooks for about 5 minutes.
  4. Mix in taco seasoning, ensuring the meat is well-coated.
  5. Add diced tomatoes, black beans, corn, and broth. Stir and bring to a boil.
  6. Stir in pasta and cook until al dente, about 8-10 minutes, stirring occasionally.
  7. Remove from heat and stir in cheese until melted and creamy.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

For extra kick, consider adding diced jalapeños or salsa at the end of cooking. For a vegetarian option, swap the meat for a hearty plant-based protein or add more beans and veggies.
