A simple yet vibrant one pot meal featuring tender chicken thighs infused with lemon and garlic.

Ingredients

  • 4 chicken thighs, skinless
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium-high heat until it shimmers.
  2. Season the chicken thighs generously with salt, pepper, and dried oregano.
  3. Sear the chicken thighs in the pot for about 5 minutes on each side until golden brown.
  4. Remove the chicken from the pot and set aside.
  5. Sauté the minced garlic in the same pot for about 1 minute until fragrant.
  6. Add the lemon juice, lemon zest, and chicken broth, scraping the bottom of the pot.
  7. Return the seared chicken to the pot and cover to simmer for 30-35 minutes.
  8. Garnish with fresh parsley before serving.

Notes

For a spicier version, add a pinch of red pepper flakes when sautéing the garlic.
