  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup chocolate chips
  • 1/2 cup ground flaxseed
  • 1/2 tsp vanilla extract

Instructions

  1. Combine the dry ingredients: In a medium bowl, mix together the oats, ground flaxseed, and chocolate chips until evenly distributed.
  2. Add the wet ingredients: Next, add the peanut butter, honey, and vanilla extract to the dry mixture, and stir until combined.
  3. Roll into bites: Using clean hands, take portions of the mixture and roll them into small balls, about 1 inch in diameter.
  4. Chill to set: Place the energy bites on a baking sheet lined with parchment paper, and refrigerate for at least 30 minutes.
  5. Store in the fridge: Transfer your bites to an airtight container, where they’ll stay fresh for up to a week.
