  • 4 cups corn (fresh, frozen, or canned)
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup red bell pepper (diced)
  • 1/2 cup cilantro (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Corn: If using fresh corn, grill the corn until lightly charred, about 5-7 minutes, turning occasionally. Let it cool, then cut the kernels off the cob. If using frozen corn, thaw it and cook it lightly in a skillet until warmed through.
  2. Combine Fresh Ingredients: In a large bowl, combine the grilled corn, finely chopped red onion, diced red bell pepper, chopped cilantro, and crumbled feta cheese.
  3. Mix the Creamy Dressing: In a separate bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Dress the Salad: Pour the creamy dressing over the corn mixture. Gently toss everything together until all the ingredients are well-coated.
  5. Serve or Chill: Serve immediately or refrigerate until ready to serve.

Notes

Great served with grilled meats or as a standalone dish. Can be made ahead but add dressing just before serving for freshness.
