Colorful and nutritious Mediterranean Salmon Bowls featuring flaky salmon, fresh veggies, and creamy feta cheese, perfect for a nourishing meal.

Ingredients

  • 4 Salmon fillets
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2 cups Cooked quinoa or rice
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1 Red onion, thinly sliced
  • 1 cup Feta cheese, crumbled
  • 1/2 cup Kalamata olives
  • 1/4 cup Fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Bake for about 12-15 minutes or until the salmon flakes easily with a fork.
  4. Combine the cooked quinoa or rice, halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and Kalamata olives in a large bowl.
  5. Flake the cooked salmon into pieces and add to the bowl ingredients.
  6. Top with fresh parsley and serve with lemon wedges on the side.

Notes

Use high-quality salmon for the best flavor. Feel free to substitute grains and adjust seasoning to taste.
