A vibrant and nutritious salad featuring quinoa, fresh vegetables, olives, and feta cheese, perfect for any gathering.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness. In a saucepan, bring 2 cups of water to a boil. Once boiling, add the quinoa, reduce the heat, cover, and let it simmer for about 15 minutes, or until all the water has been absorbed. Once finished, fluff it with a fork and let it cool.
  2. Prepare the vegetables by combining the halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese in a large bowl.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Add extra dressing as needed when serving.
