A refreshing bowl of wholesome grains combined with crisp vegetables and tangy feta cheese, celebrating the flavors of the Mediterranean.

Ingredients

  • 1 cup cooked quinoa or farro
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup chickpeas, drained and rinsed
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the Base: In a large bowl, combine the cooked grain with cherry tomatoes, cucumber, red onion, chickpeas, feta, and Kalamata olives.
  2. Whisk the Dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make a dressing.
  3. Dress and Toss: Pour the dressing over the grain bowl and toss to combine.
  4. Garnish and Serve: Garnish with fresh parsley and serve.

Notes

Leftover Mediterranean Grain Bowl can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld together.
