A delightful and easy Mediterranean flatbread topped with fresh vegetables, feta cheese, and a zesty lemon drizzle.

Ingredients

  • Flatbread
  • Olive oil
  • Garlic
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Feta cheese
  • Kalamata olives
  • Fresh herbs (like parsley and basil)
  • Lemon juice
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brush the flatbread with olive oil and rub it with crushed garlic.
  3. Transfer the flatbread to the oven and bake for 5-7 minutes or until it’s lightly crispy.
  4. Remove the flatbread from the oven and let it cool slightly.
  5. Top the slightly cooled flatbread with sliced cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and kalamata olives.
  6. Drizzle with fresh lemon juice and sprinkle with chopped fresh herbs, salt, and pepper.
  7. Slice it into generous pieces and serve immediately.
