A quick and vibrant pasta dish celebrating Mediterranean flavors with chicken, olives, cherry tomatoes, and feta.

Ingredients

  • 8 oz pasta (bowtie or penne)
  • 2 chicken breasts, cooked and diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cooked chicken, cherry tomatoes, olives, and oregano to the skillet. Stir and cook for 5 minutes until everything is heated through.
  4. Add the cooked pasta to the skillet and gently toss everything together until well combined.
  5. Season with salt and pepper to taste, adjusting flavors as you see fit.
  6. Remove from heat, and sprinkle crumbled feta cheese and fresh basil on top before serving.

Notes

For a complete meal, serve with garlic bread or a salad. Leftovers can be stored in an airtight container for up to 3 days.
