A vibrant Mediterranean Beef Bowl combining hearty ground beef with refreshing quinoa and colorful veggies for a satisfying meal.

  • 1 lb ground beef
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sautéing the Beef: In a skillet over medium heat, cook the ground beef until it’s nicely browned. This should take around 8 minutes. Make sure to break it up with a wooden spoon as it cooks. Once browned, drain any excess fat.
  2. Combining the Base: In a large mixing bowl, combine the cooked quinoa with the halved cherry tomatoes, diced cucumber, red onion, sliced olives, and crumbled feta cheese.
  3. Whisking up the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Dressing the Salad: Pour the dressing over the quinoa mixture and gently toss everything together.
  5. Final Assembly: Serve the beef over the quinoa salad and finish off with a sprinkle of fresh parsley.

Notes

Use lean ground beef or substitute with ground turkey for a lighter version. Feel free to switch up vegetables based on availability.
