A delightful Mediterranean dish combining cod with vibrant flavors of cherry tomatoes, Kalamata olives, and capers, bringing the taste of the coast to your kitchen.

Ingredients

  • 4 cod fillets
  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 1/4 cup capers
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the cherry tomatoes, Kalamata olives, capers, minced garlic, lemon juice, olive oil, dried oregano, and salt and pepper in a large baking dish.
  3. Place the cod fillets atop the vegetable mixture.
  4. Spoon some of the mixture over the cod fillets.
  5. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Notes

Serve with couscous, quinoa, or a green salad. Pairs well with white wine or iced tea.
