Delicious and nutritious Lentil Tacos, perfect for weeknight dinners or casual gatherings.

Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Taco shells
  • Toppings (lettuce, tomato, avocado, salsa)

Instructions

  1. Rinse the lentils under cold water, removing any impurities or tiny stones, then place them in a pot with vegetable broth, ready to soak up all that flavor.
  2. Bring the pot to a boil and then lower the heat to let it simmer for about 20-25 minutes, checking for tenderness.
  3. Sauté the diced onion and minced garlic over medium heat until they’re soft and fragrant.
  4. Add the cooked lentils into the skillet along with cumin, smoked paprika, and salt and pepper. Stir to combine and let them cook together for an additional 5 minutes.
  5. Scoop that delicious lentil mixture into taco shells and top with your choice of fresh ingredients like crisp lettuce, juicy tomato, creamy avocado, and vibrant salsa.
