A simple yet sophisticated roasted chicken infused with lemon and herbs, perfect for family gatherings or quiet dinners.

Ingredients

  • 1 whole chicken
  • 2 lemons
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C) to get it nice and hot for roasting.
  2. In a bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  3. Take that delightful herb mixture and rub it all over the chicken, making sure to get under the skin.
  4. Squeeze the juice of one lemon all over the chicken and place the squeezed lemon halves inside the chicken’s cavity.
  5. Place the chicken in a roasting pan, pouring the chicken broth into the bottom of the pan.
  6. Roast your chicken in the preheated oven for about 1 to 1.5 hours, until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Notes

For extra flavor, add sliced onions and carrots to the roasting pan. Don’t waste the chicken drippings; they can make delicious gravy.
