Delightfully tangy lemon bars with a buttery crust, perfect for summer gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour and powdered sugar in a mixing bowl.
  3. Cut in the softened butter until the mixture is crumbly.
  4. Press the mixture into a greased 8×8 inch baking dish.
  5. Bake the crust for 15-20 minutes, until lightly golden.
  6. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder.
  7. Pour the lemon mixture over the hot crust and bake for an additional 20-25 minutes until set.
  8. Cool completely and dust with powdered sugar before cutting into bars.

Notes

Use freshly squeezed lemon juice for the best flavor. Store leftovers in an airtight container at room temperature for up to 3 days.
