A vibrant Italian pasta salad filled with fresh vegetables, mozzarella, and a zesty dressing, perfect for any occasion.

  • 8 oz pasta (fusilli or rotini)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 bell pepper, diced
  • 1 cup mozzarella balls, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente. Once done, drain and let it cool to room temperature.
  2. Combine the cooled pasta with cherry tomatoes, diced cucumber, red onion, bell pepper, halved mozzarella balls, black olives, and chopped basil in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl until well combined.
  4. Pour the dressing over the pasta salad and gently toss everything together to ensure the pasta and vegetables are evenly coated.
  5. Serve the salad chilled or at room temperature, perfect for any occasion.
